Recipe of the Month: Laura’s Herb Crusted Rack of Lamb
Ingredients
- 1 rack of frenched lamb or enough for 2 + per person.
- 3 Tablespoons extra-virgin olive oil
- Salt and Pepper
- ⅓ cup bread crumbs
- ⅓ cup grated Parmesan
- 1 Tablespoon minced fresh rosemary
- 1 Tablespoon minced flat-leaf parsley
- 1 large clove garlic
Instructions
- Preheat oven to 450 F / 230 C
- Heat a large skillet over a high heat. Drizzle lamb with 1 Tbsp. olive oil and season with salt and pepper. Sear until browned on all sides, about 3 minutes per side. Place on a baking tray and let rest for 10 minutes
- Meanwhile, in a blender, combine bread crumbs, parmesan, rosemary, parsley and garlic. Stir in olive oil and season with salt and pepper and blend
- Pat the breadcrumbs over the lamb rack in an even layer
- Bake 25 minutes for medium / medium rare. Let rest 10 minutes then slice between the bones into individual chops.
If the lamb isn’t cooked enough for your taste just leave in the oven 5 minutes longer respectively.
I have served with celeriac and potato puree mash, air fried potatoes, home grown boiled carrots, buttered, garlic asparagus and red wine gravy. Yummmmmy!
